What if Jim Henson’s Swedish Chef took on craft beer? Look no further. Ralph Sgro, brewmaster and co-owner of Terrestrial Brewing Co., is a close stand-in with wild ingredients as his pillars. “We’ve done as weird as smoked pig bones, gummy worms,” he says. “I’ve brewed with just about everything I can push my brain to think of.”
After opening in April 2017 as a relative newcomer in Cleveland’s brew scene, Terrestrial affirms its singular place in the city’s seemingly over-populated mecca with one-off beers — from the Canopy Crusher ($6 for 16 ounces) to the Public Pilsner ($5,50 for 16 ounces), a light lager that's good for beer novices.
With Sgro concocting all of Terrestrial’s 12-16 rotating shuffling brews by hand, the only negative might be falling in love with this week’s saison. “I just don’t want to get bored brewing the same beer every day,” Sgro says.
