His BC Smores dessert ($6.50 regular, $3 mini size) is an elegant approach to the campfire staple with a chocolate-peanut ganache on a graham cracker crust. The crowning glory is a homemade marshmallow that Evans and his team whip up using egg whites and melted sugar before torching it. "I wanted a dessert that truly represented the log cabin comfort feel," Evans says. "I can remember roasting marshmallows with my family when I was young.
