It started as a joke. After being challenged by a frequent customer to add wings to the menu at Berea’s Boca Loca Burrito Factory, owner Heather Doeberling jumped into action. “He said, ‘Well, if you guys served chicken wings, I’d be here every day,’ ” she recalls. Doeberling spent six months in the kitchen experimenting with different recipes to find the perfect one. The end result was a gluten-free chicken wing recipe that includes two secret spice blends, eight hours of brining, one hour of baking, four hours of chilling and about two minutes in the deep fryer. After selling out of the wings at Boca Loca for a year-and-a-half, she added Boss Chick N Beer to her foodie flock in October. Inside the laid-back restaurant, just up the street from Boca Loca, Doeberling doesn’t drench the wings ($10 a pound) in sauce, but includes the house-made concoctions on the side. “To me the perfect wing is extremely crispy.
