Keni Scherbinski learned everything she knows about baking from her grandmother. “The first thing my grandma taught me to bake was bread — before I could even reach the counter,” she says. “I would stand on a chair next to her and knead the dough. It’s still one of my favorite things to make to this day.” In 2015, Scherbinski purchased the Bakery Shoppe in Medina, where she worked as a baker, and revamped it to become Honey Bee Bakery. The boutique shop specializes in ornate cakes, hand-decorated sugar cookies and other desserts. “The most important thing to me is that everything we make is made from scratch,” she says. As a longtime vegan, Scherbinski offers at least five vegan options in her bakery case and even instituted Vegan Takeovers every Wednesday at Honey Bee.
