Although stuffed cabbage is a labor-intensive dish, owner Michael Sokolowski can roll more than 170 of them in less than 35 minutes. After coring and wilting the cabbage, he trims out the stem and stuffs it full of ground beef, pork, veal and rice with just a hint of garlic and seasoning. "Back in Poland and those parts of Europe, when you were able to get a piece of meat, you really stretched [it]," he says. The Polish entree is available Thursday through Sunday, and occasionally on Monday — but only when the 180 rolls made for the weekend haven't sold out.
