Kranjska Kolbasa, $15 | Sterle's Country House
Served with a griddle-fried potato and a healthy portion of Cleveland Kraut's classic caraway sauerkraut, the Kranjska Kolbasa is made with an all-natural hog casing that's filled with pork and bacon. Though in Slovenia it's traditionally smoked over beechnut wood, Sterle's smokes the sausage over applewood for four to five hours to sweeten the sausage. "There's a lot of natural sugar that's in the wood itself and the sausage is actually double ground to give it a much finer, smoother consistence," says general manager James Gibson.
