Tacos are more than just handy ways to eat a meal — they are vehicles for experimenting with new tastes and textures. "Tacos are conduits to all these great different flavors that people can try and share," says Andy Himmel, owner of Bomba Tacos and Rum. The new Rocky River restaurant amps up the fun with more than 15 versions of the popular street food along with 65 varieties of rum and menu options such as tortas and guacamole. Himmel, who also owns Paladar Latin Kitchen and Rum Bar in Woodmere, suggests trying the charred kale and corn taco ($3) with potatoes, grape tomatoes, roasted garlic aioli and queso fresco on a flour tortilla. "The natural bitterness from the kale is complemented by the sweetness from fresh corn and grape tomatoes," says Himmel.
