Very Easy Blueberry Cobbler
Serves 4 to 6
2/3 cup whole-wheat pastry flour
1 1/2 teaspoons baking powder
2/3 cup oat milk, multigrain milk, or no-fat soy milk
1 tablespoon vanilla
3 tablespoons maple syrup, sugar or honey
2 cups blueberries
1. Preheat the oven to 350 degrees.
2. Combine flour and baking powder in a small bowl.
3. Combine vanilla, milk and maple syrup in a measuring cup and stir. Then add to the flour and mix until smooth. Don't worry if the batter is quite runny.
4. Pour the batter into an ungreased nonstick 8-inch square pan. Sprinkle the berries on top. Bake for 45 minutes or until lightly browned.
A few tablespoons of any sorbet is delicious with this.
