Savory pierogies get all the dumpling love. But Rudy’s Strudel and Bakery in Parma proves the comforting little pockets of joy can hold a fruity surprise with its apricot pierogies ($7.40 per dozen).
Third-generation baker Lidia Trempe stuffs house-canned apricot preserves into pierogi dough, adding a bit of sugar and starch so the filling can stand up to the cooking process.
“And we hand-pinch every single one, wearing our babushkas,” she says.
Whether pan-fried with a side of sour cream, or served cold with powdered sugar or creme fraiche, Trempe, whose parents bought the bakery in 1978 after emigrating from Poland and Ukraine in the ’60s, says the apricot pierogies are a refreshing treat.
