Break out the hefty knife and fork — you’ll need it when you start digging in to the many hearty, meat-centric dishes at Gibbs Butcher & Brews. Co-owner Jim Dixon opened the restaurant in September just 1 1/2 miles from Gibbs Butcher Block, where 30 different kinds of gourmet sausages are made each week.
Those same sausages, including an apple-bacon-pumpkin or honey-habanero are featured on a rotating sausage sampler board ($12) with assorted mustards and dips. But that’s just the beginning. The thick-cut bacon flight ($12) skewers black pepper, Cajun, maple-bourbon and duck bacon all in a row as a sweet and smoky appetizer to whet your palate. For a heavier entree, or as a comforting side, try the house-made Mac ‘N’ Beer Cheese ($4 side, $8 full). Served in a hot iron skillet, the sauce is thick and savory, made better by a host of flavorful add-ons such as tenderloin tips ($8) and lump crab meat ($5).
And while there’s plenty of sandwiches, wings and steaks to choose from, you’ll want to go all in on the Gibbs Burger ($9.50). On its own, the thick patty, made from a special spiced blend of 80/20 ground beef, is smothered with lettuce, tomato, onion and your choice of American, Swiss, cheddar or hot-pepper cheese. But when you layer on additional toppings such as fried egg ($1), fried bologna ($2) or caramelized onion bacon jam ($1) it becomes a towering, mouth-watering favorite.
